Ingredients
  

  • 4 medium apples or 5 small
  • 4 large eggs
  • 2 tablespoons honey
  • 1/2 cup milk
  • 2 tablespoons oil
  • 1 teaspoon vanilla extract
  • 3/4 cup spelt flour or oat flour
  • 1 Pinch of salt
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • Sliced blanched almonds for decoration optional

Instructions
 

  • Peel the apples and slice them very thinly using a mandoline or sharp knife.
  • In a mixing bowl, whisk eggs and honey until frothy.
  • Add vanilla extract, milk, and oil, then whisk briefly to combine.
  • Add salt, cinnamon, spelt flour, and baking powder, mixing until just combined.
  • Gently fold in the apple slices, coating them evenly with the batter.
  • Line a loaf pan with parchment paper and layer the apple slices flat, using your hands for the best “invisible” effect.
  • Pour any remaining batter over the apples.
  • Sprinkle with sliced almonds if desired, then bake at 350°F for 1 hour.
  • Let the cake cool in the pan for 30-45 minutes, then remove and cool further before slicing.
