- 3/4 cup milk
- 1 tsp vanilla extract
- 1 banana
- 2 eggs
- 2 large carrots about 5 oz, shredded
- 1/4 cup walnuts
- 1 tsp cinnamon
- 1/4 tsp ground ginger
- 1 cup rolled oats
Blend all ingredients in a blender until smooth, then form small pancakes on a hot non-stick skillet.
Cook for about 1 minute per side, flipping when the edges turn golden.
Serve with yogurt, a sprinkle of cinnamon, shredded carrot, and walnuts on top.
