Ingredients
  

  • 3/4 cup milk
  • 1 tsp vanilla extract
  • 1 banana
  • 2 eggs
  • 2 large carrots about 5 oz, shredded
  • 1/4 cup walnuts
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1 cup rolled oats

Instructions
 

  • Blend all ingredients in a blender until smooth, then form small pancakes on a hot non-stick skillet.
  • Cook for about 1 minute per side, flipping when the edges turn golden.
  • Serve with yogurt, a sprinkle of cinnamon, shredded carrot, and walnuts on top.
