- 3 oz raw almonds about 1/2 cup
- 3.5 oz pitted dates about 3/4 cup
- 2 tsp unsweetened cocoa powder
- 1/3 tsp ground cinnamon
- Pinch ground nutmeg
- 1/5 tsp ground cloves
- Pinch salt
- 3 tbsp warm milk dairy or plant-based
- Unsweetened shredded coconut for rolling
Blend the base. Add almonds, dates, cocoa, cinnamon, nutmeg, cloves, and salt to a food processor. Process until very fine and starting to clump.
Add milk. Pour in warm milk and process again until the mixture forms a sticky, cohesive dough that holds when pressed.
Roll. Scoop and roll 10–12 balls with your hands. Roll each ball in shredded coconut to coat.
Chill & enjoy. Chill on a plate or small tray for about 15 minutes, then dig in.
If the mixture feels dry, add 1–2 tsp more warm milk. If it’s too sticky, pulse in 1–2 tsp additional almonds.
For extra cocoa flavor, roll half the batch in cocoa powder instead of coconut.
Wet your palms lightly to make rolling clean and easy.
